Recommended cooking method: steaming, soup, porridge

  • Steam: with Teochew fermented soy beans & ginger; or HK steam with superior soy sauce

  • Soup: stir fry the bones and head on high heat with ginger and scallion, before adding water and optional Shaoxing wine and bringing to a furious boil for 30 mins to extract the threadfin collagen. Strain. This is the famed threadfin collagen broth. Poack threadfin slices in this broth
