These scallops are grown in the very cold seas around Hokkaido, with strong currents and plenty of exercise. After landing, the scallops are immediately processed and blast frozen at a dedicated factory near the port. Of course, nothing is added.

The outcome—firm flesh with rich flavour and intense umani, shining as a sashimi, and also seared, poached, or in tempura. When thawing, there will be some precious pearl-coloured juices. Stir this scallop elixir into porridge, especially for kids!

You’ll taste the difference with the so-called ‘Hokkaido’ scallops you get elsewhere—those have typically been processed in China from Hokkaido or Chinese raw material, with water retention agents and phosphates added to increase size, improve looks, and make the scallops remain ‘plump’ after cooking—at the expense of safety and taste. Those are not truly sashimi grade, unlike our Hokkaido Gyoren scallops

Recommend to thaw overnight in the chiller; if in a hurry, seal in a zip-lock bag and thaw quickly under running water. Never let the scallops come in contact with water before cooking (it loses flavour), and please do not thaw at room temperature for safety. Do not refreeze. Please be extra careful when handling seafood for sashimi consumption
