* Frozen Mackerel Otah

Otah made with chunks of mackerel, Muar-style. A simple dish, simply steam or pop in the oven for 8 minutes, and serve.

A personal friend of ours from Muar recommends gentle steaming with beaten egg custard. The smoothness of the egg goes really well with the spiciness of our Otah.

Junch likes to spread it on bread and toast it to make Otah Toast, or wrap in banana leaf and air fry on high for glorious smokiness.

**A recommendation for safe thawing. Either seal in a plastic bag and thaw rapidly under running water, or thaw gently overnight in the coldest part of your chiller.
