Snow crab meat is prized for its sweet flavor and delicate, tender texture. As it is less briny than other crab varieties, it is versatile for various dishes.

Ours is more delicious than others, because:

  • It is blast frozen from live crabs that are just harvested, maintaining the juciness and sweetness of the crab.

  • It’s from the famed Tsukiji Kanisho, Japanese crab specialists

Texture

  • Meat: Snow crab meat is flaky and succulent, with a slightly sweet taste. The texture is light and tender, making it easy to pull apart.
  • Claws and Legs: The meat found in the legs and claws is particularly sought after for its flavor and texture, often coming in large, easy-to-extract pieces.

Thawing recommendations:

  • Speed thaw platter under running water. (Recommended)
  • Thaw platter in chiller for not more than 5hrs to prevent the crab blood from turning blue black. This is due to oxidation and whilst harmless, it does not look appetising.
  • Do not leave at room temperature 
  • Please cook snow crab immediately after thawing

Cooking Methods

This 400g platter is good for 2-3 pax, and very easy to eat because it is semi-shelled

  • Great in steamboat / shabu shabu / dashi / pasta
  • Steamed over egg white and huadiao / cooked in porridge
  • Lightly grilled over charcoal with brown butter
  • Steam directly from frozen to minimise thaw juices, keeps crab succulent

Take care not to overcook. These are sashimi-grade cold water crabs with very thin shell,
they cook very quickly. Snow crabs are delicious and can be prepared in many ways to highlight their unique flavor!
