Japanese-restaurant quality, sent straight from Toyosu market, this dashi pack is the closest you can get to making your own ichiban dashi with katsuobushi and kombu. Not readily available outside Japan. It’s really simple—just add 1 packet to 2 litres of boiling water, and simmer for 10 minutes. Add water to adjust to taste if required. You’ll have at least 2 litres of delicious, natural dashi.

This dashi is great for hotpot, soup, Japanese dishes, or (Junch’s favourite) to cook with Japanese rice in your rice-cooker in place of water. Before the rice is fully cooked, add your favourite toppings and let the steam from the rice cook the ingredient—crab meat, for example, or corn or mushrooms—and you have a wonderful Dashi Gohan.
