The half king crab you are getting comprises 3 large legs and a claw, with meaty shoulders attached. This 4L 800g cluster is from a 2.4kg crab!

• Thawing Method

• Steam directly from frozen to minimise thaw juices, keeps crab succulent

• Wash away protective glazing under running water, and thaw overnight in chiller

• Speed thawing under running water in original packaging. Please do not let the crab get into direct contact with water to prevent the crab from losing its sweetness.

   

Cooking Method  (Take care not to overcook the crab)

Steam timing approximately 6-8mins if you cut the crab into smaller segments, 5-6mins if you half shell the crab

• Steamed with egg white & huadiao, finished tableside with sizzling chicken fat

• Steamed, and quickly tossed with the sauce of your choice (chili, white pepper. etc.)

• Cold crab - After steaming, plunge in ice water immediately
• Grilled with brown butter
